Ingredients
5 Cheddar Folios™
1 lb. Ground Turkey
2 tbsp. Vegetable Oil
1oz. Packet of Taco Seasoning
1 can of Refried Beans
2/3 cup water
2 Avocados - pitted and skin removed
1 tbsp. Sour Cream
1 fresh Lime – juiced
Pinch Salt and Pepper
1 cup shredded Cheddar Cheese
1 cup shredded Lettuce
1 large Tomato – diced
¼ Red Onion – chopped
Directions
Use four of the Cheddar Folios™ as taco shells by microwaving one at a time per directions on package. Remove Folios™. Quickly and carefully bend two sides up to form a taco shell. Hold in place for about 1 minute until it holds its shape and hardens. Repeat until 4 shells are made and carefully set them aside. Take the last Cheddar Folios™ and microwave approximately 1 ½ minutes. Remove the disc and leave to cool. Once cooled, crumble the Folios™ and place in a small bowl.
Put vegetable oil in a pre-heated skillet on medium-high heat. Add ground turkey and stir. While stirring, add taco seasoning and break up the turkey until you have browned crumbles (approximately 12 minutes). In a small sauce pan, add the refried beans and water. Smash and stir on low heat until it simmers. Lastly, place avocado in a bowl with sour cream, lime juice, salt, and pepper. Blend into a guacamole.
Now you are ready to build your Cheddar Folios™ tacos! Take 1 Cheddar Folios™ taco shell and add ground turkey, bean sauce, and guacamole. Then top with tomatoes, onions, lettuce, shredded cheddar cheese, and Cheddar Folios™ crumbles. Repeat for remaining Folios™ taco shells.
