In his white lab coat, Chris Lotito looks as much like a scientist as he does a cheese maker. As he explains all the ways you can prepare and serve his latest specialty food product, cheese folios, it is clear he spends a lot of time on experimentation.
Lotito is the owner and president of the multimillion-dollar Edison-based Lotito Foods, a 100-year-old, third-generation family business that imports cheese and Italian specialty foods, produces private-label food products and provides food services.
